Fresh water tank
A fresh water tank, or potable water tank, holds the clean drinking-quality water a food truck uses for handwashing, dishwashing, cleaning and cooking. A pump pressurizes it so every sink has running water.
Sizes are set locally. NACCHO and Maricopa County, Arizona use 5 gallons for a hand sink alone and 30 gallons with a three-compartment sink, plus 20 for a prep sink. The FDA Food Code wants the tank enclosed, sloped to drain completely and filled through an inlet of 3/4 inch or less. Oregon asks for a translucent tank, and Los Angeles County doesn't approve stainless steel or aluminum ones.
