Generator
A generator on a food truck is an engine-driven power source, usually run on gasoline or propane, that supplies electricity for refrigeration, lights, pumps and electric equipment when there's no shore power to plug into.
Size it by adding the watts of everything that runs at once. The Cummins Onan QG 5500 LP is rated at 5,500 watts and 45.8 amps at 120 volts. The NFPA wants generator exhaust at least 12 feet from openings and air intakes and asks for barriers between the generator and the public.
Los Angeles County requires generators to sit in an area completely separated from food prep and storage. Mark it on the plan in the layout maker. See what size generator a food truck needs.
