Hand-washing sink
A hand-washing sink is a sink reserved for washing hands, with hot and cold water through a mixing faucet, soap and paper towels. The FDA Food Code requires at least one, placed for convenient use and used for nothing else.
The Food Code sets the water at 85°F or more, while counties such as Maricopa County, Arizona and King County, Washington ask for 100°F. Common minimum sizes are 9 by 9 by 5 inches in Maricopa and Los Angeles counties and about 10 by 10 by 6 inches in King County. Many places want at least 5 gallons of fresh water set aside for it.
Put it within reach of the cooking line, not just at the back. The food truck layout maker has a hand-washing sink item, and food truck sink requirements lists more local rules.
