Propane
Propane, or LP gas, is the bottled fuel most food trucks use for gas griddles, fryers, ranges and water heaters. It's stored as a liquid under pressure in portable cylinders or mounted tanks.
Worthington makes steel portable cylinders from 4.25 to 100 lb, about 9 to 15 inches across and up to 48 inches tall. The NFPA food truck fact sheet asks for cylinder valves reachable without tools, daily visual checks, and a leak test each time a cylinder is changed. Rockdale County, Georgia requires cylinders secured against falling and a gas leak alarm in the truck.
In the layout maker, propane tanks are an item you can place outside the kitchen line. Fire departments often inspect propane systems separately.
