Three-compartment sink
A three-compartment sink is a sink with three separate bowls for washing, rinsing and sanitizing utensils by hand. The FDA Food Code requires one for manual dishwashing, with compartments large enough to submerge the largest equipment and utensils.
Health departments often set a minimum bowl size. NACCHO and Los Angeles County list 12 by 12 by 10 inches deep or 10 by 14 by 10 inches deep per compartment, with drainboards on both sides. An Advance Tabco K7-CS-21 with 10 by 14 inch bowls and two drainboards measures 58 by 19-1/2 inches overall.
It's one of the largest fixtures in a truck, so place it early. The layout maker includes it as an item with editable size, and food truck sink requirements covers the rules.
