Type I hood
A Type I hood is a commercial kitchen exhaust hood built for cooking that produces grease or smoke, such as griddles, fryers and charbroilers. It has grease filters, connects to an exhaust fan and is usually paired with a fire suppression system.
Several states write it into their mobile rules. Iowa's fire marshal requires a Type I hood with a UL 300 suppression system for new mobile vendors doing commercial cooking, and South Dakota requires a Type I hood with removable metal grease filters over equipment that makes smoke, steam or grease vapors. The FDA Food Code adds that a hood must not drip grease or condensation onto food.
Plan the cooking line under one hood. The layout maker has an exhaust hood item you can stretch over the equipment below it.
