Flat-top griddle
A flat-top griddle is a cooking appliance with a thick, flat steel plate heated from below by gas burners or electric elements. It's the main cooking surface on many burger, taco, cheesesteak and breakfast trucks.
Sizes go up in steps. Star-Max gas griddles come in 15, 24, 36 and 48 inch widths with a 28,300 BTU burner for every 12 inches. The 36-inch Star-Max 636MF measures 36 by 29 by 15.5 inches and is rated at 84,900 BTU.
A griddle makes grease and smoke, so it goes under a Type I hood. In the layout maker, the flat-top griddle starts at typical dimensions you can edit to match your model.
