Fire suppression system
A fire suppression system is a fixed, automatic system in the hood that discharges an extinguishing agent onto the cooking equipment when it detects a fire. On food trucks it protects griddles, fryers and other grease-producing appliances.
NFPA 96 calls for fire-extinguishing equipment over appliances that produce grease-laden vapors. Los Angeles County requires a system over all cooking equipment, certified every 6 months, and Rockdale County, Georgia wants it serviced every 6 months. Iowa asks for systems meeting UL 300.
Portable extinguishers are separate. See what size fire extinguisher a food truck needs and Type I hood.
